    @edythemighty: Not at all .. just adding grated cheddar is not on. @jezlyn: Nothing .. just not grated cheddar. Ricotta, fetta, even camembert is fine.

    @rickmeasham - well, fried tends to implied 'cooked all the way through', while seared is more 'cooked on the outside, red on the inside'.

    Also, if you're buying it at a restaurant, the difference is probably at least $50 at the end of the night

    awabi? wassat?... *googles*... oh, seems kinda unlikely... we're pretty much limited to what the local (to work) sushi place sells (ie, if they have a decent tuna, I count myself lucky) and what I can find at the local (to home) fish market.

    My wife and I did that, and had a serious sushi binge... put us right off it for about a month :)

    @malach Nope, many because I don't trust the fish I can get not to be too old (as in safe to eat cooked but not raw).

    @Fyrefiend - ahh.. that's why I go to the local fish markets where I can check it out before buying it... you can get a pretty good idea of how fresh it is, even when cut :)
